>Rainy Wednesday


So the day started out quite icky!! Rainy, rainy morning, I even left early, but I tried to make it better with a skinny caramel macchiato from Starbucks…but just after leaving the area, I continued on my drive into work and was greeted with this:
Good lord I HATE the new ICC traffic!! It was backed up for miles once again today on the road to pass by, but as I safely snapped this picture (stopped at a light) I made a left and continued my journey. 
Work was good today, I delivered another training on how to give and receive effective feedback. It always surprises me when I am having an icky day and then I interact with groups of people and I feel better. I guess it’s true I do get my energy from others, I am true to my E.
After work today I made another delicious meal. From scratch I created pesto sauce so that’s it’s low-fat, and still tasty! I then grilled some shrimp, mushrooms, and spinach and added the whole-wheat pasta at the end. I am super excited because I have leftovers for Friday!

I added a little mozzarella cheese at the end. Of course as much as I love cooking I hate the cleanup, and I have delayed it for a while…I guess eventually I will have to take care of that soon. 


>Taco Tuesday


So my plan was to post my delish fish tacos…but of course I was hungry and ate them before i took a picture, also I promise they didn’t look too appetizing but they tasted good. I always get the question about are the homemade and the answer is yes! Here’s the recipe, orginally from weight watchers cookbook, but I made some changes…so here’s with the changes.

Fish Tacos
½ c light sour cream
1 tsp pureed chipotles en adobo
4 c Broccoli slaw
1 tsp grated lime zest
1 ½ tbsp lime juice
2 tsp canola oil (you can use less)
1 tsp salt
¾ tsp black pepper
½ tsp chili powder
1 pound firm-fleshed skinless cod or halibut
8 (6-inch) corn tortillas, warmed

1- Spray cookie sheet (or broiler pan) with nonstick spray and preheat the broiler
2- Stir the sour cream and chipotles en adobo together in small bowl
3-Stir coleslaw mix, lime zest, lime juice, oil, ½ tsp salt, ½ tsp pepper in large bowl
4-Sprinkle the fish with remaining ½ tsp salt, remaining pepper, and chili powder. Spray lightly with olive oil nonstick spray and place on rack. Broil 5 inches from heat until fish is just opaque throughout, 5-10 min. Divide the fish evenly among tortillas. Top evenly with slaw and sour cream mixture.

I also added a small amount of 2% Mexican mix cheese to each of the tacos
I love Taco Tuesdays!!! Of course I don’t always make it happen, but I need to get back in the habit…possibly even try the skinny margarita recipe I have. 

>San Antonio Part 2


We arrived on Wednesday and promptly headed down to the river walk for a stroll and some lunch…and of course when in TX it’s necessary to start the day right with some made at the table guac! I love Mexican, but at this point I actually need a break for a few days, although i am thinking Tuesday will be Taco Tuesday….
We took a walk up and down the river, went to some cute shops in La Villita (many little paintings, photos, and nick-knacks). Sadly despite being on vacation work still called and we headed back to the hotel for rest and work…then out for more food. We found a cute little place called Manhattan Mexican. Since there was a bit of a wait for a table we decided to eat in the bar, which was a great choice!! We got to meet the owners, got more guac and some Mexican food. It was the best fajitas I have had in a VERY long time! And because we are lame, we headed back to the hotel after dinner and were asleep by 11….of course that’s central time so not as bad right?
Thursday we made our way over to the Alamo, which as most people said is underwhelming, good thing it’s free because after a quick walk through it was time to move on, and since we didn’t have breakfast we had an early lunch and stopped at BBQ place on the riverwalk on the way back to the hotel. Little did we realize when we planned our trip to TX did we know that the WHOLE DANG STATE was having spring break, so everywhere we went was packed! We tried to see of the local nature sites, some thing called safari and the zoo, but with such long waits we didn’t have time before the show….What show do you ask? The one, the only American IDOL, BON JOVI!! 
The concert was great, as always! But my favorite of his concerts so far has been in Nashville. 
Friday morning we did some work early in the AM, then headed to breakfast at a great restaurant find, Magnolia Pancake Haus it was delicious as predicted! Then up to Austin for our taste of South by Southwest, which was amazing, crazy, entertaining, and overwhelming! We didn’t really have a plan so we wondered around for a while, then found a few tasty frosty beverages, then some good music! I really liked a band from Santa Barbara CA, too bad I probably won’t see them again any time soon. It’s interesting because the bands change every 30-45 minutes so in a short time you can really get a feel for the music, but if you don’t like it you don’t have to wait too long. Also while there we saw a quick water gun fight in the street, it was pretty funny it just started out of nowhere, much like the snowball fights in Baltimore or DC. I wonder if it was announced via twitter?

Sadly we had to catch a flight Saturday morning so we left Austin by 8 to make it back to San Antonio for the night so we could relax Saturday morning before take off! And back to Baltimore we came.

San Antonio part 1

Headed to San Antonio for a few days…it was fun! It was hot, in the 80’s every day! I love the heat, but I wasn’t ready for it to be that hot. It’s a picture of the green river ordered especially for us for St. Patty’s day.

>zumba saturday


So as part of my changing things journey I am attempting to eat healthier…I was good most of the week, sadly I wish the result was better. But I will not let it detract my from the good things in life like Zumba!! It’s a great workout and it’s fun…so in a while off I will go to a 45 minute zumba class. Many ask what Zumba is, the best way I can describe it is aerobics to dance music with lots of hip shaking. It’s fun and even if you don’t know what you are doing if you just keep moving you are having a good workout. 
Also on tap for Saturday is some cleaning, laundry, and planning for the next few days. I hate doing laundry, it’s not even the cleaning part I hate it’s the putting stuff away. 
Back to the eating healthy I went to one of my favorite grocery stores, Trader Joe’s, for a few quick things since I am traveling soon. I bought clementines, so I am hoping they are tasty and I bought some bananas…my favorite fruit. So how weird is this I read on someone else’s blog that bananas are berries because seeds are on the inside, luckily I am not allergic to bananas because that would be a VERY SAD DAY! I am not sure why they are berries, but I say grapes are too…which I love too, but i only like the seedless purple ones. I also bought some delish veggies: spinach, tomatoes,  broccoli, lettuce…lots of good stuff!!
